WAKABA Organic Traditional Grade Matcha is a versatile Japanese matcha developed for cafés, bakeries, restaurants and food manufacturers that use matcha regularly and in larger quantities.

It has a distinctive matcha character with fresh vegetal notes and a noticeable, clean bitterness. Its flavour remains present when combined with milk, sugar and other ingredients, making it particularly suitable for matcha lattes, smoothies, baked goods, ice cream, desserts and professional food production.

WAKABA is a Japanese-led matcha specialist based in Düsseldorf, Germany. Since opening our first matcha café in 2018, we have gained practical experience preparing and serving matcha in a European café environment. Preparation for a Matcha Latte

Sift approximately 2–3g of matcha into a bowl or cup. Add 30–50ml of warm water at approximately 70–80°C and whisk until smooth. Combine with around 180–220ml of milk or a plant-based alternative.

Adjust the amount of matcha according to the size of the drink, the sweetness of the recipe and the desired intensity.

Recommended Dosage for Foodservice

  • Matcha latte: Approximately 2–3g per serving
  • Cakes and baked goods: Approximately 10–30g per kilogram of mixture
  • Ice cream and desserts: Approximately 10–25g per kilogram of mixture
  • Smoothies and blended drinks: Approximately 2–4g per serving

The ideal dosage may vary depending on the recipe, other ingredients and the desired colour and flavour intensity.
